BomPORTO Cod Milanese Style

Ingredients:

• 1 Bomporto Cod Loins pack
• 3.5 oz (100g) of Breadcrumbs
• 3.5 oz (100g) of Flour
• 2.6 oz (75g) of Bacon fat
• 2 Carrots
• 1 Onion
• 1 Tomato
• White Wine
• Parsley, to taste
• Pepper, to taste
• Olive oil, to taste



Step by Step:

1. Defrost, skin and de-bone Bomporto Cod loins. Cut into cubes and season with pepper.
2. Chop the onion, bacon fat, grate the carrot and cut the tomato.
3. Coat Bomporto Cod loins in flour, egg mixture and breadcrumbs and fry them in olive oil.
4. Meanwhile, prepare the sauce braising the onion, bacon fat and the carrot in olive oil. Add white wine and let it simmer.
5. Add to the Bomporto Cod cubes, the chopped tomato and sauce to accompany.
