BomPORTO Cod Risotto

Ingredients:

• 14 oz (400g) of Medium Bomporto Codfish Slice
• 12oz (350g) of Arborio Rice
• 1 Onion
• 2 tablespoons of Vegetable Broth
• 4 Peeled Tomatoes
• 0.4 pint (2dl) of White Wine

Step by Step:

1. Place the Bomporto Cod in a pan, cover with cold water and let it heat until it begins to boil.
2. Remove from stove and let Bomporto Cod cool down.
3. Take Bomporto Cod out of pan, filter 2 pints of the cooking water and place on a low heat.
4. Skin and de-bone Bomporto Cod.
5. Peel the onion, chop it and place it in a pan with the vegetable broth and let it cook until the onion is soft. Add the peeled and chopped tomatoes and stir.
6. Add the rice and stir well until hot. Add the wine, stir and let it simmer until the wine evaporates.
7. The gradually add the warm water used to cook Bomporto Cod, stirring from time to time until rice is cooked.
8. Add and mix the Bomporto Cod.
9. Add butter and grated cheese , stir well until is creamy.
10. Check the salt, add pepper... and serve sprinkled with parsley!
