BomPORTO Cod Hamburguer

Ingredients:

• 1.3lb (600g) of Shredded Bomporto Cod
• 3.5oz (100g) of Flour
• 6 slices of Loaf Bread
• ½ Onion
• 2 Eggs
• 0.2 pint (1dl) of Olive Oil
• 5.3 (150g) of Butter
• 0.3 (1.5dl) of Cream
• Parsley
• Salt, to taste
• Pepper, to taste



Step by Step:

1. Blanch the Bomporto Cod for 2 to 3 minutes. Then drain, skin, de-bone and shred it.
2. Meanwhile, break the bread into small pieces and soak it in milk. Finely chop parsley and onion.
3. Add Bomporto Cod, bread, eggs, onion and a tablespoon of parsley. Mix and knead the dough.
4. Hand mold them, coat them in flour and fry both sides in olive oil and butter mixture. Drain them on absorbent paper.
5. Make a sauce: Grind the cream with garlic and parsley and boil it. Season to taste with salt and pepper and add a bit more chopped parsley.
6. Serve Bomporto Cod Hamburguers accompanied by the special sauce and boiled vegetables... or a mix salad!
