Zé do Pipo BomPORTO Cod

Ingredients:

• 4 Bomporto Cod Portuguese slices
• 1 egg yolk
• Milk, to taste
• 0.2 pint (1dl) of Olive Oil
• 2 Garlic cloves
• 1 diced Onion
• 1 teacup of mayonnaise

For the purée:

• 2.2lb (1kg) of Potatoes
• 1.4oz (40g) of Flour
• 0.4 pint (2dl) of Milk, used to cook Bomporto Cod
• Egg yolk to brush
• Nutmeg, to taste
• Pepper, to taste
• Salt, to taste

 



Step by Step:

1. Desfrost and wash Bomporto Cod.
2. Place it in a pan, deep it in milk, and lightly cook it.
3. Remove from milk, and try to de-bone the slices without deforming them.
4. Place the Bomporto Cod slices in a baking tray brushed with mayonnaise.
5. Set aside the milk.
6. Make the purée: peel, cut and boiled the potatoes in water with a pinch of salt. Mash them, add the butter, and slowly add the milk where Bomporto Cod was boiled ... until smooth and creamy.
7. Season with salt, pepper and nutmeg, to taste.
