Ingredients:
• 1 Bomporto Portuguese Slice pack or 1 Bomporto Loins pack
• 2.2lb (1kg) of Potatoes
• 3.5 oz of Bacon
• 3 Eggs
• 1 Red Sweet Pepper, cut into strips
• 1 Green Sweet Pepper, cut into strips
• 2 Peeled Tomatoes, chopped
• 1 tablespoon Tomato Pulp
• 2 Onions, thinly sliced
• 4 Garlic cloves
• 1 Bay leaf
• 1 White Beer
• Olive oil, to taste
• Flour, to taste
• Chilli sauce, to taste
• Salt, to taste
Step by Step:
1. Defrost and wash Bomporto Cod.
2. Slice onions into rings, peppers into stips and chop the garlic.
3. Coat the cod in flour, then dip in the egg mixture. Fry it in olive
oil.
4. Arrange the fried Bomporto Cod in a plate.
5. Fry the onion rings, garlic and bay leaf in olive oil until golden,
then add the peppers, chopped tomatoes, tomato pulp, the bacon, the
beer, the salt and pepper.
6. Once this sauce is ready, remove from heat and pour over Bomporto
Cod.
7. These are best served with baked potatoes (like the ones described in
Bomporto Cod à Lagareiro).
